It sounds like you have a UUID specified in your /etc/fstab file that no
longer exists.

While you are in single user mode you need to edit /etc/fstab and find
out what that filesystem is.  If it is something that is no longer being
used (as in maybe a temporary mount for the drive you removed) then
comment the line and reboot.  If it is a filesystem you moved to a
different device then you need to update the UUID string.  You can find
out the UUID of the new filesystem with:
tune2fs -l /dev/sd?? | grep UUID
(of course change the ?? to the right device)

If you get a read only filesystem error on /etc/fstab then try:
mount -nvo remount,rw /
