I tried that too.  

--exclude-from=excludes.txt

with

- /proc/
- /dev/
- */*.iso
...

but my patterns are wrong and I don't think rsync ever read the file.  is _that_ an absolute path?  

--exclude-from=/path/to/excludes.txt
