I'd recommend an embedded PC of sorts, that is designed for this kind of task.  
One well-known brand for that is Soekris (http://www.soekris.com/).  Sure, 
it'll cost more than a crappy throw-away PC, but it'll also boot from flash 
and use a heck of a lot less power.
