With that scheme, you may as well go with a RAID-1 setup and not worry
about backing up between the two drives. RAID-1 is easy and reliable
enough to do via software or hardware (whereas RAID-5 should really only
be done via hardware or make REAL sure your UPS is rock-solid at all
times). You'd still want to back critical data up to a remote location
somewhere (in case of fire), but that covers simple hard drive failures.
