John,
PostgreSQL and mySQL are both rock solid databases and would work well for
you. If your db queries get very complicated, then you're better off with
PostgreSQL. I wrote a telecom biling app that ran on RH9 & postgresql for
over 400 days non-stop before they had to pull power - the only time I
received a problem call was when the app couldn't connect with a MS Sql
server database that was down that it pulled data from. Volume was over a
million records per month.
Again, you'd probably be happy with either db. I think the real driver will
be what application you put between the database and the users.
Any idea of what kind of volumes you're looking at? Also, any scanners, etc.
that might be used for data entry that might need to be factored in?

We "want" it web based, for *nix so preference is php java is not a problem
or concern (does not matter) reorder REMINDERS (it would be ordered thru a
'procurement' department as this is a 501c3 company

So you want:
* items
* categories
* item attributes
* stock management
Anything else from a data point of view? How about ordering replacement
items? How about invoicing for such orders? How about sales
management?
Do you want it to be a stand-along desktop app, a client-server desktop
app or a web-based system? Do you have any OS / technology requirements
(Java, not Java, not VB, not .NET, PHP, not PHP, etc)?
You could be very quickly looking at needing an ERP system, which could
get really complicated really quickly.
