Like Steve, I also prefer to have 2 GB. :)

Though I'm not a professional artist or author, I love The GIMP and
OpenOffice and I often have them both open working on many
files at the same time.

I usually get as much RAM as I can afford at the time I build/buy a PC.
Since that's driven by my budget, sometimes I get 512 MB, sometimes
I get 1 GB, sometimes 2 GB, and by then I've usually run out of cash. :O

For "low-end pc's" 512 MB seems to fit the bill.  You can always add
more RAM to a low-end box.
