"Time is money" and part of the equation.
Consider your electronic skills, available time, and $.

High quality, low cost, moderate effort, note the audio application in the example, and read the comments. http://www.engadget.com/2005/09/27/how-to-build-a-telephone-recording-circuit-from-an-old-modem/

A couple years ago I wanted to transfer my cell phone voicemail to an archive of mp3 files. So I bought a RadioShack Cat# 17-855. Got too much pop and crackle, a waste of money.

Somewhere around here I still have a suction cup microphone that attaches directly to the telephone hand-set.

But the easiest way I have found so far is to use a high quality speaker phone. One that the party on the other end can't tell your on a speaker phone. Like a Panasonic model# KX-T3155, with a standard microphone on your PC, and audacity.
