Most of the time you can type  man and the command or app you want to 
know about and it will come up....

There are many more hits for learning linux than windows on the internet....

Just jump off into it and let it take you everywhere....

** Joe can be installed by synaptic and emacs.....emacs is extremely 
extensive...it's kinda like asking what's God
and someone handing you a bible...wow.....information overflow.....

better start with joe or nano....or pico ....something really 
simple....first then graduate to vim or vi or emacs.....
