You can actually load Linux (completely legal and proper) on an
Xbox...for that matter, you can even get Win98 to run through bocks.
Hookup a usb keyboard and mouse and just pick a browser.

I would even use VNC on the laptop to remotely control the xbox from
the office (ssh access too directly to the xbox).

There are also just other dashboard apps you could use (however not
all are legal, as they were 'signed' by an illegal copy of xbox sdk).
Opensource dashboards like Opendash and neXgen are available (but not
all actively developed).

You can load linksbox (a web browser for the xbox)
Shoot, if you don't want a dashboard mod or Gentoo then just run
x-dsl.  It's an Xbox Linux distribution based on Damn Small Linux
(hence, x-dsl name).
